My original translated back to plain text just fine on the translator I used, but I now realise that particular app unhelpfully omits leading zeroes. Here's the same message with leading zeroes in place, which should translate better... 01001000 01100001 01110000 01110000 01111001 00100000 01001110 01100101 01110111 00100000 01011001 01100101 01100001 01110010 00100000 01110100 01101111 00100000 01111001 01101111 01110101 00100000 01110100 01101111 01101111 00100000 00111011 00101101 00101001

I tried the following which requires chatgpt to demonstrates some AI rather than simply aping a google search. I think anyone could decode the message with a little thought, but to prove that I need someone to do it.
Q: the following message has been encrypted using a simple substitution code where each letter represents a different letter, what does it say? NQJ EMJUCIJLN YA NQJ DLCNJI UNHNJU
A: It is not possible for me to determine the original message without more information. A simple substitution code like the one you described could have many different solutions, and there is no way to determine the correct one without a key or some other context.
Hint Have a guess at the word NQJ which occurs twice. Then the two letter word. Fill in the letters in the other words on the assumption that your guess is right. The Bletchley Park method.

Q: the following message has been encrypted using a simple substitution code where each letter represents a different letter, what does it say? NQJ EMJUCIJLN YA NQJ DLCNJI UNHNJU It doesn't really take an AI, a computer could easily find the solution by brute force, i.e. try all possible combinations and see which ones form valid words, given an English word list. But ChatGPT is not wrong, it could have more than one solution.

That's true, but it's not the way an intelligent being would do it. chatgpt could not do it either way. The decoder you gave the link to says that there is no alternative solution.
