Maybe I just need to devote 30 minutes to the subject but really struggling to get things how I like on my phone.
It seems for both notifications and their corresponding sounds and volumes there are dozens of menus and sub-menus all apparently controlling these things. Anyone else either struggled like me or know of a good guide out there?

On a serious note: yes its difficult, but maybe not as difficult as you are experiencing. One route in is via settings for individual app. So for example, select the app on the screen by holding the icon down. That brings out the pop up menu, one option of which is "App Info". If you open that, then it brings up various settings, Notifications being one of them. N.B. This is also a good opportunity to review 'Permissions' that you have allowed for the app. Click on Notifications and then you've got access to all the different types of notification for that App. You can either switch a notification off, or select how you want to be informed, and if by sound, normally allows you to make a sound choice (see what I just did there ??).

I am no fans of modern OSes. It gives me hardly any control I want and sometimes it is frustrating the features don't work like they are intended to do.

That's ok you get a like from me anyway because that is a pretty good tip! For years I'd been messing around with clicking overall settings, then apps-notifications and then finding the app.

I agree although I guess the touch based ones like android/ios are probably harder to get right given the limited input. Windows 10 and even worse 11 have no excuse given its users typically have a full size keyboard and mouse. I suppose there is zero cash in MS producing a fully ad-free and annoyance free platform that just lets users launch their own apps with ease. OSX is a more robust product but has fewer applications available for it (especially free ones)
