Same as with any other interest payment, when any interest is paid against a loan it is always in relation to a period of time. The system works out who owned what during that period of time and allocates interest accordingly.

After you have sold all (or part) of a loan, any interest accrued and outstanding should still be shown on the "Your Loans" display until it is paid.
(Loan Book / Your Loans).
