Perhaps crispy duck needs some elaboration, because that is the name of a dish and crispy is all right in that case. Though Crispy Duck is English for Peking Duck (wossat then?), which should really be Beijing Duck, because Peking is just a European name for Beijing, no longer used. But all the Beijing restaurants in the Peking Duck area still sell Peking Duck; I have eaten it there quite recently. What I object to is people saying, 'this fish/chicken/duck skin is not crispy and I can't eat it.' The word is crisp!

I wouldn't care if the skin was crisp or crispy if they'd cook the blummin' duck instead of just showing it the pan. I swear sometimes if they quacked at it loud enough, it would answer back.

They will make sure you are fully deceased, plucked and gutted, before they put you in the boiling water to ensure your skin ends up 'crispy'. Mmmmmmm. Markr - those Europeans often do not rest a duck breast long enough after cooking. If it moves off the dish while resting, then you need to put it back in the oven.
