Errr ... isn't this loan due to repay today, 28th Jan ? No sign of any dosh at time of writing (7:15 pm).
Should lenders be concerned?

Looking at the proposed new long term deal outlined on the Email, am I correct in assuming that the tax implications will be confined to year 5? Is accrued interest part of any platform declaration to HMRC?

You are correct to my personal understanding. Our accountants are looking at it to see re accruals. Obviously over five years rules can change too. This isn't tax advice but I am seeking clarity.
